This past week the family picked the remaining gorgeous blueberries on the farm.
We decided to back Blueberry Cobbler because it is easy, delicious, and heavenly with a scoop of vanilla bean ice cream! YUM!!!
Easy Homemade Blueberry Cobbler
Preheat oven to 350 degrees F
Use a 9 X 13 inch baking dish. Place 6 tablespoons of butter in the dish. Place the dish in the oven & let the butter melt as it preheats.
Remove the pan from the oven as soon as the butter is melted.
Blueberry Ingredients:
In a large bowl add the 4 cups fresh Blueberries, 1/2 cup granulated Sugar, and 1 teaspoon of Lemon Zest. Stir gently until all the ingredients are combined. Place the mixture to the side & let the blueberries, sugar and lemon zest work their magic!
The Cobbler Batter:
In a separate bowl mix 1 cup all-purpose flour ,1 cup granulated sugar, 2 teaspoons baking powder, and 1/4 teaspoon salt. Stir in 3/4 cup milk and combine until smooth.
Assembly of the Blueberry Cobbler:
Pour blueberry mixture over the warm butter in the baking dish. Carefully drizzle the cobbler batter over the blueberries. Add a sprinkle of cinnamon over the batter for added flavor!
Bake at 350 degrees F for about 35-40 minutes, or until the cobbler is lightly brown on top.
Serve the cobbler warm with a scoop of vanilla bean ice cream.
