EGG~stravaganza

This past summer our 14 chickens and Pekin Duck blessed us with an abundance of large beautiful free range eggs. So many in fact we shared dozens with family and friends and still had enough eggs to use when baking and preparing as meals. Now, what to do with all those eggs?


A quick, easy, and tasty family favorite is Crustless Quiche.

Crustless Quiche

  • 6 eggs

  • 1 cup grated or shredded cheese ( Swiss, Cheddar, Mozzarella, etc...)

  • 1 cup milk

  • 2 tablespoons Parmesan cheese

  • Ground Black Pepper & Salt

  • Optional additional ingredients include 1 cup of any combined vegetables or meats:

  • Bacon

  • Cubed ham or steak

  • Cubed cooked potato

  • Chopped Spinach

  • Chopped Onions or Scallions

  • Chopped Broccoli

  • Chopped Asparagus

  • Preheat oven to 350 degrees

  • Whisk 6 eggs, milk, cheese, salt & pepper.

  • Add any additional optional ingredients

Pour the quiche mixture into a buttered pie plate and bake uncovered for about 1 hour or until the center is set. Enjoy!
