My friend shared a delicious gluten free peanut butter cookie recipe that would satisfy my family’s sweet tooth. As some of you may be aware, the egg acts as the binding agent in a flourless recipe. Due to this the cookies will be soft when removed from oven. So let the cookies rest on the baking sheet prior to placing them on a cookie rack to cool.😊
INGREDIENTS:
3 Eggs
2 cups white sugar
1/2 cups Quaker quick oats
1/8 teaspoon vanilla extract
2 tablespoons maple syrup
3 cups peanut butter
2 teaspoons baking soda
Preheat oven to 375 degrees. Lightly butter cookie sheet. In a bowl beat the eggs and then add the remaining ingredients stirring until smooth. The mixture will thicken into a dough suitable to roll into 1 inch cookie balls . Place each ball 2 inches across on the cookie sheet. Slightly flatten each ball with a fork .
Make a crisscross on each cookie ball with the fork. Bake for 10 minutes or until a light golden brown .
This recipe yields approximately 2 dozen cookies.
