To make farm-fresh leek spinach cream soup:
Ingredients:
- 2 leeks, chopped
- 4 cups fresh spinach
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Olive oil for sautéing
- Optional toppings: croutons, grated cheese, or fresh herbs
Instructions:
1. In a large pot, heat olive oil over medium heat. Add chopped leeks and garlic, sauté until softened.
2. Add spinach to the pot, stirring until wilted.
3. Pour in the vegetable or chicken broth. Bring to a simmer and cook for 10-15 minutes.
4. Using an immersion blender or transferring in batches to a blender, puree the soup until smooth.
5. Stir in the heavy cream, and season with salt and pepper to taste.
6. Let the soup simmer for another 5 minutes.
7. Serve hot, garnished with your choice of toppings.
